Who doesn’t love a good pesto? Pesto’s add SO much more flavor, vibrancy, and downright yumminess to just about EVERY dish, in my humble opinion! It can turn a boring cracker, veggie crudités a piece of toast, a spud, pasta (of course!), or anything that is begging for a pick-me-up into something bursting with fresh delightfulness! What I love about this recipe; which by the way I have been using in my family for years now, is that I packed in as MUCH nutrition as I possibly could without it tasting, weird, or too green. Instead, what I ended up with was still the BEST plant-based pesto I have ever had, and continue to remake this exact delicious green-goodness condiment! Also, feel free to switch out the pumpkin seeds for pine nuts in this recipe – I like to rotate my pestos with pumpkin seeds (like this one) and pine nuts too – it’s YOUR choice!
