Pico de Gallo

Okay, so who doesn’t love a good salsa? This is such a super simple recipe that has been our family fav for years! SO fresh and vibrant with the right ratios of everything – it will make your tastebuds sing! We love this with our Mexican Fish Lettuce Wrapped Tacos, or as a side with my Honest-to-Goodness Crackers and Guacamole. I love this recipe so much that when we are done (and no one is looking) I will drink the left over liquid in the bowl because the flavours are AMAZING! Enjoy the freshness babes!

  • 320g 2 Cups Cherry Tomatoes, diced, discard any juice.

  • 15g 1 Tbsp Extra Virgin Olive Oil

  • 15g ¼ Cup Chopped Fresh Cilantro

  • 10g 1 Tbsp Finely Chopped Onion

  • 10g 1 Lime Juice

  • 1g ¼ Tsp Unrefined Salt


  • In a bowl, mix all ingredients together to combine. Allow to sit for 20 minutes in the fridge before serving to allow flavours to meld.


  • Storage: Salsa stores well in an airtight sealed container in the fridge for two days.
