Mexican Sweet Potato Wedges

These are such a delicious all-veggie treat! I LOVE fibre rich sweet potato wedges, but I just had to ‘pimp’ mine to see how yummy I could create this humble root veggie and what better way than to make them Mexican style! Beta-carotene is a powerful antioxidant (the orange pigment) found in sweet potatoes that studies show can help improve respiratory health, promote healthy vision and protect your skin. We love to share these on the table with one of our meals, usually teamed with a big salad and some protein! My Mexican seasoning makes these taste through the roof along with my cashew sour cream (tastes just like dairy sour cream) and no Mexican meal is complete without healthy fat and fibre rich, guacamole! These are a MUCH healthier option for ball games, BBQ’s and having guests around. Enjoy the party on your tastebuds beautiful! x

Ingredients

  • 700g 2 Large Sweet Potatoes, washed skin on, cut into wedges

  • 30g 2 Tbsps Avocado Oil

  • 1 x Recipe Mexican Seasoning

  • 1 x Recipe Cashew Sour Cream

  • 1 x Recipe Guacamole

  • Optional garnish:
  • Chopped coriander/ cilantro

Directions

  • Preheat the oven to 180C/ 365F
  • In a large bowl place wedged sweet potato and oil, toss through until well coated.
  • Add in the Mexican seasoning and toss through to coat all wedges.
  • On a baking paper lined tray, bake wedges at 180C/ 365F for 25 minutes, or until crispy on the outside and soft on the inside (oven times may vary.)
  • Serve with cashew sour cream and guacamole.

  • Storage: Wedges are best eaten immediately. See other storage recommendations for cashew sour cream and guacamole as per the recipe.
