These are such a delicious all-veggie treat! I LOVE fibre rich sweet potato wedges, but I just had to ‘pimp’ mine to see how yummy I could create this humble root veggie and what better way than to make them Mexican style! We love to share these on the table with one of our meals, usually teamed with a big salad and some protein! My Mexican seasoning makes these taste through the roof along with my cashew sour cream (tastes just like dairy sour cream) and no Mexican meal is complete without healthy fat and fibre rich, guacamole!
