Chocolate Chunk Chewy Cookies

I absolutely love having my homemade little treats on the ready for when I get the hankering, so as to avoid jumping in my car and heading to the nearest store only to have bought myself a ticket on the blood sugar rollercoaster! These are absolutely delicious, super easy to make and don’t taste “weird,” with a myriad of several different grain flours, as most gluten free cookies do. Follow my recipe and if you can weigh the ingredients by grams for a more accurate result closest to mine! These are my fam-fav choc-chunk cookies and I hope you and yours will enjoy them too! Chocolate Chunk Chewy Cookies

Ingredients

  • 160g 1½ Cups Blanched Almond Flour

  • 80g ½ Cup Chocolate Bar sweetened with stevia, or lo han guo (monk fruit), or erythritol, or a combination. Roughly chopped into small chunks.

  • 55g 1 Egg, beaten

  • 30g 2 Tbsps Coconut Oil, melted

  • 40g 2 Tbsps Almond Butter

  • 40g 2 Tbsps Yacon Syrup (prebiotic FOS), or your favourite low sugar liquid sweetener.

  • 14g 2 Tbsps Ground Flax

  • 8g ½ Tbsp Vanilla Extract

  • 2g ½ tsp Baking Powder

  • 1g ¼ tsp Unrefined Salt

  • 2g 1 tsp Ground Cinnamon

Directions

  • Preheat oven to 170C/ 338F.
  • In a large bowl combine together dry ingredients.
  • In a small separate bowl, combine wet ingredients.
  • Add wet ingredients to dry ingredients bowl. Mix well with hands to form a dough.
  • Fold in the dark chocolate chunks.
  • On a baking tray lined with baking paper use an ice cream scoop or 1 tablespoon to scoop out the dough onto the baking paper.
  • Flatten dough balls gently with your hand and bake for 5 – 6 minutes and then rotate the tray for another 5 – 6 minutes (total bake time: 10 – 12 minutes) at 170C/ 338F, or until edges are slightly golden brown.

Notes

  • Storage: These store on the counter for up to one week in an airtight sealed container. If you prefer cookies slightly harder, pop them into the fridge where they can store for weeks.
