Crispy Spiced Chickpea Croutons

Warning: These are deliciously addictive! In the best way, of course. The spices and savory flavor of these crispy whole food croutons take any salad to the next level and are also delicious on their own. 

Initially, when I was making these I couldn’t figure out how to a) not burn the spices and b) get them really crispy. After many failed attempts, I got closer to winning the crispy chickpea crouton lottery! I learned there’s a trick to getting them truly crispy and staying crispy.

The way to do this is to not coat them in the spices (which hinders the inner part of the chickpea from cooking properly) and to instead coat them after. Doing this along with the oil straight out of the oven whilst they are still cooking is paramount to getting the spices to stick along with the perfect crunch. I hope you love these as much as we do. We find it hard to keep our hands off them on their own and liberally toss them into our salads.

Crispy Spiced Chickpea Croutons

Ingredients

  • 800g 2 x Can Chickpeas (400g each), drained, rinsed. Peel off the first layer to ensure extra crunch after baking. Pat dry with a paper towel

  • 30g 2 Tbsps Avocado Oil or Coconut Oil

  • 6g 1 tsp Unrefined Salt

  • Seasoning
  • 12g 3 tsp Avocado Oil or Coconut Oil

  • 4g 1 tsp Onion Powder

  • 4g 1 tsp Smoked Paprika

  • 4g 1 tsp Ground Cumin

  • 2g 1 tsp Ground Coriander

  • 2g ½ tsp Cayenne Pepper

  • 3g ½ tsp Unrefined Salt

Directions

  • Preheat the oven to 180C/ 356F.
  • Prepare a baking tray with baking paper.
  • In a medium bowl, toss chickpeas, salt and 2 Tbsps of oil together making sure chickpeas are coated.
  • Spread the chickpeas onto the prepared baking tray.
  • Bake at 180C/ 356F for 40-45 minutes (oven times may vary.)
  • Meanwhile, in a separate bowl, combine the seasoning ingredients (except the oil.)
  • Remove from the oven and while hot using a spoon, toss 3 tsp oil to coat the hot out of the oven chickpeas and add the seasoning mixture. This will allow the seasoning to stick and dry onto the chickpeas.

Notes

  • Storage: Once completely cool, store chickpea croutons in an airtight sealed glass container on the bench. These will last for up to two weeks, or more.
