Warning: These are deliciously addictive! In the best way, of course. The spices and savory flavor of these crispy whole food croutons take any salad to the next level and are also delicious on their own.
Initially, when I was making these I couldn’t figure out how to a) not burn the spices and b) get them really crispy. After many failed attempts, I got closer to winning the crispy chickpea crouton lottery! I learned there’s a trick to getting them truly crispy and staying crispy.
The way to do this is to not coat them in the spices (which hinders the inner part of the chickpea from cooking properly) and to instead coat them after. Doing this along with the oil straight out of the oven whilst they are still cooking is paramount to getting the spices to stick along with the perfect crunch. I hope you love these as much as we do. We find it hard to keep our hands off them on their own and liberally toss them into our salads.
