Most marinades out there contain sugar, which contributes to Advanced Glycation End products, or AGEs These are harmful compounds that are formed when protein or fat are combined with sugar and enter the bloodstream. AGEs can also occur in foods that have been exposed to high temperatures during the cooking process. High levels of AGEs contribute to oxidation and inflammation in the body, which we definitely want to avoid wherever possible. Those who have high blood sugar issues are actually at a higher risk of producing AGEs.
A brain with Alzheimer’s disease has AGEs three times higher than a healthy brain. Research in the scientific literature revealed that adults with greater AGEs experienced steadily declining cognitive abilities, along with decreased learning and memory. For these reasons and more we want to avoid tossing more sugar into our marinade that increases the AGEs that our bodies naturally already make.
