If you love a tenderized flavourful steak then this is your go-to marinade. My kids and husband love this one and whenever we host BBQs at the house it’s always a favorite. Most marinades out there contain sugar, which contributes to Advanced Glycation End products, or AGEs These are harmful compounds that are formed when protein or fat are combined with sugar and enter the bloodstream. AGEs can also occur in foods that have been exposed to high temperatures during the cooking process. High levels of AGEs contribute to oxidation and inflammation in the body, which we definitely want to avoid wherever possible. Those who have high blood sugar issues are actually at a higher risk of producing AGEs.

A brain with Alzheimer’s disease has AGEs three times higher than a healthy brain. Research in the scientific literature revealed that adults with greater AGEs experienced steadily declining cognitive abilities, along with decreased learning and memory. For these reasons and more we want to avoid tossing more sugar into our marinade that increases the AGEs that our bodies naturally already make.
This marinade is in one word – DELICIOUS! Use it over whatever meat, or fermented tempeh you prefer to flavor and elevate your protein source and your dish.
Chef P’s Go-To Grilled Steak Marinade

70g ¼ Cup Coconut Aminos
55g ¼ Cup Apple Cider Vinegar
30g 2 Tbsps Olive Oil
7g 2 tsp Garlic Powder
6g 2 tsp Onion Powder
5g 2 tsp Smoked Paprika
2g 2 tsp Dried Mixed Italian Herbs
3g ½ tsp Unrefined Salt
Directions
- In a medium bowl, combine all of the ingredients and mix well.
- Add in your steak (or other meat) and ensure the marinade has coated each piece of meat. We prefer to use 100% grass-fed beef wherever possible. The top piece of meat needn’t be submerged in the marinade, however, some marinade liquid should be on top.
- Cover and refrigerate for at least 2 hours or up to 24 hours for a deeper flavor and more tenderisation.
- Preheat the BBQ/ grill to medium-high.
- Cook steaks on the BBQ/ grill depending on thickness for approx. 3 minutes (for rare) or 5 minutes (for medium to well done) on each side, or as desired.
Notes
- Storage: Marinade on its own will keep for up to 3 weeks in the refrigerator in an airtight glass sealed container.
